A 6.9 or 7.3 NA will fit without too much issue. Engine is huge and really wide, did I mention huge yet? The exhaust, intercooler (aftercooler to some) and accessories on a 7.3 turbo would make it very interesting.
If ya don't mind hacking a bunch of stuff up go ahead. Note that the ford is really heavy and you'll need to upgrade the springs too.
Don't have much to add on the Cummins swap, thought about it but I had access to a couple of older NA Internationals so thats where I'm going. Cummins is a sweet powerplant to play with, though it will also be very interesting to get in the engine bay. Been done so its possible.

You can get the pre 92 cummins pretty cheap and it doesn't have the intercooler to mess with. the cumins in big and LONG since it is an inline 6. but it has been done and I plan to do it some day. Personally I'd look for a 3/4 or one ton donge and steal the ebtire running gear from it so you have all modern stuff.
Those 715 parts will be hard to come by in africa. from what I'm seing some of them are hard to come by here. You may want to wait till you get there and find something that has local availability to swap in. I see alot of mitsubishi flatbeds and such there
